The rule on truing tires is that the new tread depth will be the low point of the cupping. If there is enough left for your purposes and the about $20 a tire is worth it compared to investing the $20 in a new tire then go for it. I have done this a couple of times with really high performance tires that would still be above the tread wear indicator when done.
