My first 9-5 was a 2000 Aero; after 280K miles I replaced it with a new 2007 9-5 Aero this past August. My wife has had a 2004 9-5 ARC for 4 years. In total this has added up to 335K miles in 9-5's.
Previously, I had a total of 5 9000's, 2 of which were Aero's. And before that.... I bought my first Saab (new) in 1967 and I've been buying them ever since.
The 9-5 is a very solid reliable car. With the passage of time Saab has done things underneath the covers that have enhanced reliability. My new 2007 has never had a single warranty item.
If you are thinking used 2004 and 2005 are good years in that a lot of engineering improvements have been made. My wife's 2004 9-5 ARC has proven to be outstanding after 55K miles. Truthfully, before I bought the new 9-5 I was focused on finding a good 2004-2005 with automatic (my first in 45 years.)
About sludge.....look for regular oil and filter changes. At 250K miles I dropped the pan on my 2000 9-5; it was clean with absolutely no sign of sludge. I've always changed the oil and filter every 5K miles.
