You're right in suspecting the timing chain. The symptoms you describe fit; noise at startup that goes away as the car warms up and occassionally reappears.
Removal of tension on the serpentine belt while the car is running may be unsafe. Also, worn serpentine belt pulleys are not known to cause a rattling sound that disappears after the car is warmed up.
In my case the rattling, and symptoms identical to what you described, was caused by a worn chain tensioner. Replacement solved the problem. Check for sludge; remove the valve cover and inspect.
