The computer drives the temp guage, and is (by default) programmed to filter out variations in temp. So if the temp does not get up to the preset low temp, it will register as "zero".
Its likely that the thermostat has failed open. Which is the standard failure mode of saab t-stats since the 9000 days.
it could also be a failing temp sensor, or a faulty temp sensor connection. Its a good idea to connect/re-connect the sensor wire a few times to eliminate a dirty connection there as a cause.
Many folks simply replace both the tstat and sensor at the same time to avoid the trouble of diagnosing one or the other.
