Fuel pressure alone is not a reliable way as long as the pump is good enough to start and run the car.

Even a worn pump is capable of reaching the fuel pressure regulators demand.

Fuel pressure together with measuring fuel delivery (volume) might give you a better picture but is more cumbersome to test since you need a stop watch and a container for the fuel to pour into.

Yes, when the pump is getting old and worn, it spins slower than a new pump due to friction here and there in the bearings and rollers of pump unit.

This slower RPM can be picked up by using a labscope and using the same time base for different sample pumps.
I have not bothered to build such a library of samples since it is so many different pump designs used over the years since Saab introduced fuel injection in their cars.
And the two samples from an old and new pump has to be taken from identical pumps and preferable the same car to be accurate.
