temperature gauge drops and CEL comes on

Hey, all-
I'm having a problem with my '03 Linear (at 113k). Even after replacing the thermostat(the prior owner) and the sensor (me, just after I bought it a few weeks ago), I keep having my temp gauge drop to zero (though it occasionally creeps up), and the CEL come on (it's been on for a few days now). I keep bringing it back to the garage (not a dealer, so they may be missing something), and they keep "wiggle checking" it, resetting the CEL, and sending me on my way with a "we're not really sure what's wrong with it, but it seems to be working fine now."
2 weeks later, the same thing happens: the gauge drops to zero, suddenly, and the CEL comes on. At one point I drove it a few hundred miles like this, and didn't seem to notice anything out of the ordinary, but I do want the functionality on that gauge and the CEL back. Any further suggestions?
Am I within my rights to ask the garage for a refund of the parts and labor on that sensor? It pretty clearly wasn't the problem, and I'd rather just take the money to a dealer instead, as it seems like they're unable to diagnose it. Thanks for any help you can give.
