IMHO (and yes, I know others may have a different viewpoint), I would do the thermostat at the same time. Cost is low and draining the cooling system is necessary to do this part replacement.
By all means, check hoses for softness.....upper radiator and heater hoses. If soft/mushy, replace. If you feel along the length of a hose the softness is very apparent.
I would replace the temperature sensor when there are symptoms. Symptom is mid-scale reading on the temperature gauge followed by a sudden drop to the lowest point on the scale, and possibly a CEL.
Also, I would replace the heater control valve only when there is a symptom....leaking. Mine went 250K miles before it started leaking.
