boost , fuel cutooff , and overboost issue - 2001 Aero

I have not known about the overboost function on my car until recently. I tried to see if my car boosts higher so after leaving work the other day I buried the gas in every gear going up a freewy ramp and onto the highway. It boosted half way into the red and once it seemed to jerk when it was halfway into the red like it was a fuel cutoff to prevent overboosting. A few mninutes after this it would only boost to the end of yellow on the gauge. Othertimes when driving it it would only boost to the end of the yellow. This morning which was crisp and cold I was doing 75 mph on the highway and i buried it and it boosted halfway into the red then jerked like a fuel cutoff. I tried this about four times this morning and it went into the red and jerked everytime and then would only boost to the end of the yellow.I tried burying it five minutes later and it would only boost to the end of the yellow. What I am wondering is should my car boost half way into the red even with overboost or is the fact that I get the fuel cutoff jerk an indication of a problem. Just wondering what the gauge is supposed to say even with the overboost feature plus what good is itr if it only works during the first four minutes of driving.
