I dislike the Winter mode and never use it. It causes the auto on my 2000 to start from a stop in third gear to prevent wheel spin, but that is just much too slow for me. I never use Winter mode and apply gentle throttle instead to achieve launch on slippery surfaces.
ESP can be turned off at speeds below 25mph. Having ESP disabled is very advantageous in certain situations, such as climbing a slippery drive. The ESP will slow the engine to idle and apply braking to the non-slipping wheel if wheel spin is detected. Turning ESP off can result in added fun for winter driving!
I run dedicated winter tires also. In fact, I spent 90 minutes this morning putting the winter tires on the car and the summer tires in storage due to the forecast of snow and icey roads starting toay.
