Finally changing ATF fluid, but.....

Before I do, one last round of questions.
I have read several posts and have spoken with the local dealer. The local dealer said for pre-2001 only need Dexron III. The owners manual states Texaco Dexron III. So I spent the morning running into every local part stores and purchased 7 qt of Valvoline Max Life Dex/Merc. The back of the bottle stated pre-2006 GM, and is recommended for Dexron III vehicles.
So... First, Did i get the right stuff? Second, I understand why the fluid needs to be changed more than once, but why 3 times? If you get approx 3.5 qt per drain and the transmission holds 7.5 qt, why changed the thrid time? Finally, want else should i look for when draining the fluid?
Oh yeah, 2000 9-5, 203k miles, single drain and fill at 75k, single drain and fill at 145k. AND noticing slow/sluggish shifting if the car/oil is not warmed up (winter is here in Maine). Once car has run through all 4 gear shifts it runs great.
