Well, it's only important when you carry a heavy load... Actually when you read the load per tire (in lbs), the sum of all 4 tires always exceeds the max GVWR of the vehicle, or at least it should, that's where the margin of safety for worn tires, higher speeds, etc comes into play.
Most of us are far more likely to stress our tires through loading than speed here in the US. So, if you downgrade more than 1-2 numbers you are giving up some of that safety margin. I personally wouldn't do that.
Interestingly, today I was parked next to a nondescript BMW 325i, and I noticed it had 225/45-17 94W Goodyear Eagles. Nice.
