T-Stat and Coolant Sensor

Late last week I noticed my Temp Gauge keeping below 9 o'clock and even dropping to cold. It shows the classic symptoms of a bad sensor or t-stat. No CEL.
I ordered both the sensor and t-stat from a site sponsor. The sensor is not in stock and is usually shipped in 5-7 business days. How bad is it to drive in this condition? The temp gauge will warm up to just below 9 o'clock and then fluctuate in the bottom half of the gauge. After a while it just drops down to cold and stays there. I'm thinking it could be a bad coolant sensor and the t-stat just stays open to prevent over-heating.
Either way, I cannot take the next week off from work and I have to go to Boston this weekend. If only this was summer, I'd have my VW Bus out of storage. I am wondering if driving will cause any lasting issues until I can get the parts shipped to me. I just don't want to go to the dealer and pay their prices.
