7es plugs

I regapped today after ~14K. I decided to experiment with a smaller gap of sub 0.036". I think I originally had them at 0.037" to 0.038" which there were still more or less set to. I am confused as to why some recommend close to the lower setting of 0.035" while some discussion on the performance board by Dr. Boost suggests close to the maximum 0.040-0.041 and then changing them frequently. I think Dean tried that and thought it was a bad idea maybe due to US gasoline.
The plugs had some carbon on the threads and the tip of the electrode. The rest of the tip was light brown. Does this mean the 7es are too cold and I should go back to 6s? Should I change the plugs? There is an old post by Coolknight that says the carbon buildup on the plugs lowers MPGs. These copper plugs are very cheap compared to gasoline.
Does the gap affect the amount of carbon buildup? I had carbon buildup with the platinum OEM plugs so it might truly be the US gasoline.
Any good tricks to regapping? Some of the plugs were very stubborn and didn’t want to bend. It seems almost impossible to get the gap identical between the plugs despite using a feeler gauge.
