I cannot give you any reason as to why on EARTH that happened to you, but I can tell you a little about the system so you're more informed. It sounds like you handled it very well, I probably would have needed fresh undies if that happened to me.
The sensors for the side airbags have nothing to do with the sensor(s) for the front airbags. In an accident the front airbags can deploy without the side airbags, and one or both side airbags can deploy without the front airbags. The side airbag sensors are built into the front doors. They rely on a rapid change of air pressure within the door(s) to set off the respective side airbag.
The main airbag control computer is in the rear of the center console. Under the back seat vents, rear seat heat button, and 12v plug. It's bolted to the floor and I believe has an accelerometer in it to detect a massive change in velocity in the forward direction, which would set off the front airbags.
I can't tell you for sure if pulling the SRS fuse will completely disable the system (I think it would though), but I'd start investigating by pulling the interior driver door panel of off and inspecting the weather barrier and sensor, looking for moisture.
I wonder if your insurance company would be willing to help with repair costs? Good luck!
