01 Aero Engine Cooling Issue

Here's a neat one. Last summer, on a very hot and humid day, after about an hour of driving, check engine light comes on, and engine temp gauge goes almost dead (it registered about 1mm), a/c started blowing warm. Tech II said coolant temp sensor, so replaced that and thermostat (did not appear to be stuck open). Since the summer, I have replaced the coolant temp sensor 2 more times, it seems to work ok for a couple of weeks, then same issue. Right now, if I don't turn the a/c system on, everyting is fine, although appears to take too long to get to operating temp. Once that cooling fan comes on though, I get check engine light and engine temp gauge registers either very low or almost not at all. I also had the water pump replaced since the summer, in an unrelated incident, it didn't seem to have any impact on this issue. Could it be just a bad batch of coolant temp sensors, or possible ecu issue?
