I think it is the 87°C thermostat that does that.
I have about a 2-3 mile testrun and if the gauge has not reached middle after that when starting from cold, it is usually a lazy thermostat or temp sensor.
Certainly, ambient temperature overnight and daytime plays a role in this scenario as well.
I can also look at the temperature using my scan tool and if it is in the high 70s or 80s when driving, it is a partially open thermostat. Usually, the norm here is 90-96°C when driving with a warmed up car.
