Coolant issues post thermostat replacement

I may know how to do my brakes but the cooling system is still largely a mystery to me so I'll have to describe these issues in layman's terms:
1. Had thermostat changed at mechanic, needle at 9 o'clock no more CEL.
1.5 Had coolant flush and refill performed at indy.
2. After I got the car back I noticed that the coolant reservoir was only filled to the low mark even when hot. Indy said it's fine and I kept driving.
3. Took highway offramp at high speed and got DING! Low coolant message.
4. Found half used bottle of proper coolant and filled up to proper line... maybe a little too high. Car runs great and all, also noting that temp needle at 9 or slightly lower.
Q: I REMEMBER THE COOLANT LEVEL IN THE RESERVOIR USED TO CYCLE; NOW ITS ALWAYS AT THE TOP LINE. Regardless of whether the car is overnight cold or 60 mile 85mph run hot. Should I be concerned? Why is this?
