re-examine every inch of the inlet tract from the turbo to the throttle body. You're looking for a host that isn't connected, or a hole that doesn't have a plug, or any way that air could bypass the turbo and the MAF. You're looking for large holes, finger size or larger, but almost any hole can be a problem.
You may also want to remove all of the large hoses that connect the tubes that come off the turbo. These can easily look like they're fine, but there might be a tear in them that lets air go past it.
Next, make sure that you didn't miss any electrical connections or small vacuum hoses.
These are the most likely things that can get missed after a major repair like that.
