Since the 1970s (1960s?) crankcases have been sealed - so what's the difference between a sealed bottle and a sealed, non-working engine? Similarly, the brake fluid reservoir is (at least on my '06 9-3) has a rolling rubber seal rather than an open vented cap (as on earlier Saabs).
The petroleum fluids are designed to resist moisture and oxidation in the harshest of environments (high temperatures for both, contaminated atmosphere for the engine oil) for a long time - the benign environment of a stored, brand new vehicle is very benign by comparison.
The brake fluid is the one area where sitting around could be detrimental, and of course you have no warranty. I wouldn't worry, but if you do, there are tools out there that can measure the water content in brake fluid - find a service provider that has one.
