Running on fumes cause CEL to come on?

(I apologize in advance for the length of the post!) Was driving my '02 9-5 Aero at highway speed last night, gas light had been on for a little while, but SID was telling me 25 miles until empty. Car started hesitating, particularly when attempting to accelerate. CEL starts flashing, I pull over, shut off, wait a few, then restart. CEL solid, and would run as long as I didn't accelerate too much. I babied it 2 miles to home and let it sit overnight. Tried driving to auto parts store today to pull code (CEL still on), made it halfway. Eventually stalled and wouldn't start (even though SID said 23 miles to empty). Thought initially I tripped TB into LHM, but that was fine. Disconnected battery while driving to auto parts store to borrow their scanner, hoping that would clear the code and would allow car to start. Came back 20 min later, reconnected battery, started car, no code, but stalled instantly. Put 5 gallons of gas in, started right up, no CEL, no issues whatsoever. Here's my question after all of that - Can running very low on gas (to the point where the engine is hesitating) cause the CEL to come on? Secondly, every car I've ever run out of gas with has just run until it died, then would do nothing. I find it interesting that I could "drive" so long in the 9-5 on fumes. It almost seems that the car detects when it's running on fumes and allows you to baby it for few more miles rather than simply using up every drop of gas and leaving you stranded wherever you happen to be.
