Check all vacuum hoses especially the ones connected to the Throttle Body. There is a one a way check valve plastic / vacuum that fails and car will run funny at low rpm. Happened to mine. Go to auto parts store and get something close to replace. Search for my name and I have a post or two on it.
After reading your post almost for sure this is it. The hose connects to the top of the TB, easy to find and replace.
Other things it could be.
1) Fuel Pump going bad
2) Weak / bad CPS (usually bad when hot)
Could consider replacing both anyway as part of preventative.....
3) Weak Ignition Coil Pack (long shot on the V6). I assume this was one with the recall a while back. Our 01 had the recall.
