Clean the injectors with Techron Concentrate.
Check tire pressures.
Check for dragging brakes or parking brakes.
Check trany fluid level.
Had any low voltage events? Might be time for a reboots, disconnect the battery for a few minutes, then drive and allow the system to re-adapt.
If fuel pump is worn, you can have a situation where there is not enough fuel to support higher power demands, limiting full throttle performance. However, if the system goes lean like that there should be CEL codes.
A restricted exhaust system can cause problems. I have no idea how to investigate that.
When you turn the key to 'ignition', before you crank the engine, does the low oil pressure light come on? If not, the pressure switch has failed and needs to be replaced. The danger is low oil pressure and no indicator.
Piston rings could be fouled and stuck. What oil has been in use? You can do a compression test, perhaps using an oil additive that "cleans sticking valves and piston rings". What is your oil consumption?
What did the old plugs look like?
