I have a black 9-5, and it does tend to look dirtier faster than some other colors, notably silver or gray (which tend to show dirt the least). In some ways, this is actually a *good* thing, as it encourages me to keep the car washed, which is something I've done far too infrequently with my previous vehicles. They suffered the consequences of this neglect, too...baked-on grit, bugs, etc., making washing a real pain when I did get around to it.
As for your preferred color, my wife's car is white, and let me tell you, it's every bit as much of a pain to keep looking clean as black. The only difference is that you don't see fine scratches and smudges nearly as easily.
If you're looking for low-maintainance (again, with potential side effects), go for gray.
