...but I couldn't find a way to connect up to a ratchet with all the crap in the way! MI-Roger's tip to use a massive combination of extensions might be the ticket!
That said, I followed Anders' advice and spray the petcock with wd40, and eventually was able to open it by hand. I never even lifted the car. Also, you don't need to remove the upper rad hose to change the t-stat, just undo the housing... also, you don't need to undo anything much (other than drain) to swap the temperature sensor - just unplug the connector and use an appropriate 19mm deep socket over the whole sensor. See link below for my run through of this about a week ago...
