First oil:
Mobil 1 0W40 is fine. It will make cold weather starts a bit easier. However, I've been using (mostly) Mobil 1 10W40 High Mileage in my wife's 9-5 for about 3 years. That car is now at 125K. Last two changes have been with Pentosin 5W40 which is more expensive. These oils all meet the European A3/B3 spec for oil in the 9-5. FWIW, I get the 10W40 stuff at Walmart for about $25 for 5 quarts. I use a Purolator Pure 1 or a Mann filter. I run this oil in all 4 of our Saabs.
Next the pan:
On a 2000 you want to see if the PCV6 upgrade has been made to the PCV system. That's important.
You can get a sense of the sludge potential if you pull the valve cover, but to be sure you have to pull the oil pan. Adam makes it sound simple, but it's a bit involved and takes some time. Read up on the procedures here. An indy will charge $400-500 for this job, so it's not quite plug and play. However, in a car where you don't know the history and that's of an model year known to have sludge issues, it's maybe worth dropping the pan. Beats having a plugged screen kill your engine.
