The first thing I would check would be the oil pressure with a gauge. The light could be a sign that the pressure is way to low it does not come on until I think .8 Bar which is about 11 or so psi. It may be just coming on because the engine is slowing down thus the oil pump is slowing down but if its the other way around that could be a big problem.
I would scan the engine for codes often a p1231 (throttle position sensor 1 and 2 sum out of range no limp home) can be present without turning the light on. That is usually an early code for throttle body failure and is usually noticible by changing idle speed or a surging when cruise control is on.
I would also check the throttle cable and make sure it has slack in it. If it is adjusted too tight it can cause similar problems.
Many any things such as vacuum leaks can make idling hard but they are usually worse on cold start not when hot. If you think of any other symptoms or check some of this stuff post back. Good Luck, Bernie at George Riggin Specialty Automotive
