There is no setting on that ACC to ignore the ambient temp sensor that I am aware of.
But why not replace the sensor if it is acting up? Or if the sensor itself is ok its prob the connector to it that is flaky ... in which case you could splice in a new connector. The symptom you describe does sound like bad connector at the sensor.
To "disable" it I suppose you could cut out the sensor and splice in an appropriate resistor. That way the ACC would see a constant ambient temp. The WIS might have the resistance values that correspond to temp ... or just measure the resistance of the sensor at temp you desire.
