ESP and my Aero

Even tho it keeps passengers guessing when I tell them the car will read their minds, I know it's really there to assist handling "close to the limits of tire adhesion". So why is it an on or off thing? Why not always on?
I've always been a 'seat of the pants' driver. I test the handling limits of the car (safely) and know pretty much what I can get away with. So I've never used it. But the other day I was out in some Hanna-inspired rain and hit it just for curiosity. I wasn't in a position to test it (highway, traffic, etc.) but it makes me wonder why not have it on all the time? My daily commute is 30 miles of highway speeds, or better, but in traffic. Keeps me on my toes and makes me wonder if I should keep it on in case a Stupid Utility Vehicle tries something silly. Or something.
Anyone have any thoughts?
C.
