I suppose if you were to burn off 3 months of rubber by looking too hard at the gas pedal that would be too much. As long as you still have traction, then IMO, there's no such thing as too much hp. I guess it depends what your priorities are- if you want something that's fuel efficient then perhaps you can have too much power, but I love to open it up on the highway and get pressed back into the seat!
Even if you have traction problems from a standing start- I'd be happy to take it easy(er) through first and second and let 'er rip in third. If you can break traction in fifth at 120MPH that'd be just about right (although probably not very safe)
