My wife's '01 wagon was delivered like you want, no auto-locking and all doors would unlock when you pressed the remote or removed the key. The panic alarm did function.
Since we have a young child and my wife parks in a parking deck at work I had the dealer engage the auto locking, change the unlocking (remote and key)to driver door only. Panis alarm still works. It is a small nuisance to have to press the console switch to unlock the passenger doors, but the other safety benefits outweigh the nuisance in my mind. What would be perfect if the car unlocking could be set up for 1 press driver/2 press all doors on the remote but 1 push all doors for the console and all doors when you remove the key.
