I think you're right that the GWVR is the absolute heaviest your car will weigh.
Not sure about your other calculation though. I recently went on an excursion to the dump to get rid of some renovation waste and my empty Aero wagon (empty + 160 lbs of me) weighed just under 2900 lbs
Can't remember how much gas I had, but the difference between an empty tank and full is 70L (70/4= 17.5*10(weight/gallon water)*0.8(specific gravity of gasoline?)= approx 140lbs.
I recommend a trip to the dump for vehicle weight calculation.
