Off the top of my head, you should check:
SID (Saab Info Display) - make sure there are no burnt out/missing pixels
Keys - make sure you get at least two keys and two remotes with the car, maybe you can get them to throw in an extra key & remote
ECU update - some 9-5's needed software upgrades to the ECU, make sure this was done if needed
Battery - if it's the original white battery, be sure it's fully load tested, because these were prone to failure
Brakes - get them to throw in new ones for free if the originals are low
Spark plugs - get them changed regardless because worn plugs can cause DI failure
Center brake light - check the white plastic cover to make sure it's not loose; the black plastic which holds it in place is cheap and fragile, and merely changing a bulb results in breakage
Shocks - check for oil leakage, especially at the rear
Toolkit - check that all the tools are in the trunk, along w/spare & jack
