I really liked my vented seats in my '99 (not sport Aero vented seats since they weren't available). I live in the Chicago area and agree with hdm that I appreciated them more than the heated.
So I upgraded to an '02 Aero (no vented seats - almost bought an Arc just for the vented seats, but didn't like the "growl" and weight) with just the sport seats. I still miss my vented seats (although the near-perfection of the Aero does make me forget...).
I did not find them to be crumb catchers... I have small messy kids... we even did a week long driving vacation in the '99, and luckily never had a major liquid spill, but my crumbs (and my wife and kids' crumbs) tended to be bigger than the perforations.
I would definitely try both because there was a difference in padding between the vented and non-vented regular seats. However, if you're not one of those people who are always cold (even when everybody else is warm), I think they're worth it.
