It is a Fluid Dynamics phenomena called "vortex shedding".
You are getting alternating pulses of air pressure entering the rear of the vehicle as result of the airstream passing around the car. These pulses cause the rippling of the headliner and the "helicopter sound".
It is a law of nature and there is no way to eliminate it other than to raise the rear window. These pulses of air pressure will also entrail exhaust gasses into the car, not safe to drive with the back window open.
