I don't know enough about the T7 system to be sure of this but what you are describing is a problem with Wide Open Throttle positioning. In most other cars the WOT position changes from a closed loop feedback system to an open loop system. This takes the O2 sensors out of the picture and effectively just dumps a pre-set level of fuel out of the injectors. I am guessing that the Hirsch system's WOT setting might be causing a serious rich condition (for some reason) which is killing your power.
Was some other mod (like an air filter) supposed to be done at the same time? Seems like you have killed the WOT mixture for some reason...as to why...I don't know enough about these cars yet to make a good judgement.
