At the Aero Academy they teach gripping the wheel at the 9 and 3 o'clock positions and resting your thumb over the wheel spokes. From this position you can turn the wheel 180 degrees each way which is more than enough for a tight manuever without taking you hands off the wheel. As far as the shift paddles, for the small tracks at the school, the instructors recommended putting the manual shift into 2nd gear to run the entire course and not shfting up/down. That seemed to work well. It is difficult to shift with the paddles in a turn. But usually you would be downshifting before the turn and upshifting accelerating out of the turn on a larger track.
Actually, the best recommendation we got at the Aero Academy was on how to position our mirrors. Angling the left and right rear view mirrors farther away from the car to eliminate blind spots. When a car is overtaking from behind, as it disappears from the center rear view mirror it will begin to appear in your side mirror and when it disappears from your side mirror it should be in your peripheral vision.
