The most recent recommendation for 9-5s up through 2003 is ACEA A3/B3, synthetic or semi-synthetic. (starting with 2004, it's either Mobil 1 0W40 or Saab Turbo Oil 0W30, but the recommended change interval has been extended to an even more unrealistic 15,000 miles) Amsoil 10W40 and 5W30 meet these specifications, while 0W30 meets A3 but not B3. B3 is a "diesel" specification, so it's not totally applicable, but I would use the heavier 5W30 or 10W40. I would apply the same logic to your other cars as well.
Amsoil 5W30 is ILSAC "GF3" rated, which means improved fuel economy and low phosphorous levels for compatibility with catalysts in those cars which are senstive to the amount of phosphorous in the oil. Saab does not require ILSAC GF rated oil.
