You might take it to a Saab dealer and pay for an evaluation - including a search to find the previous dealer (could be your local dealer) and call (or ask) the SM there to pull the records. Should have dealer/paid oil changes at 10K, 20K, and 30K, and you can hope for in-between oil changes as well. The 3.0 isn't as known for sludge problems as the 4 cylinder. Even so, if there's only been the "free" oil changes done, I'd take the car to a BG Service equipped shop to have an oil flush done (information coming in the next issue of NINES). If there's no record of oil changes done, I'd whimper a little and walk away from it.
Beyond that, there's no really important maintenance that can't be done now if it was missed. Like brake fluid flush, a/t fluid change, coolant flush, filters, spark plugs, pads and rotors if needed, serpentine belt if needed (these can make it the 60,000 mile timing belt change interval in some cases, not all), interior ventilation filter. I've had the temperature gauge calibration changed to remove the "dead zone" removed, so I can monitor the thermostat condition. It's always a good idea to renew the T-stat during coolant changes if there's any chance that it will fail before the next change.
