The speed ratings and handling go hand in hand for the most part. So as a general rule, a less speed rating is going to get you a lesser tire as far as handing is concerned.
And you will find that traction goes down as well, so you will have more wheel spin or TCS activity, and corning will be affected and wet and dry braking will be affected too. So you stopping distances are increased and your accident avoidance is diminshed too.
Many things depend on your tire contact patch performance. If you don't have it there, you can't have it. 'Control is everything'
Have you gone to TireRack.com and studied the tire comparisons?
You may not drive really hard or fast, but you need the braking performance and accident avoidance edge that performance tires enable. Perhaps wet braking is dangerous there with wet slick roads. You don't want to balistic in that situation.
