With the 60-profile tires your speedometer will read 3.3% too slow. My understanding is that this can be adjusted with a TechII at the dealers.
As Dean noted, you should check the load ratings (use the "specs" button on the Tire Rack page). The OEM Michelin MXV4's are load-rated 93. Load ratings for Kumho Ecsta HP4 716s are as follows:
215-55-16 = 91
215-60-16 = 94
225-55-16 = 94
Exact-fit Kumho replacements have 2 units less of load rating than stock tires, which represents something like 340 lbs in reduced load capacity. The 60-series option *does* have adequate load capacity, but there's also that fairly large speedometer error.
I picked 225-55-16 Kumho's, which yield a speedometer error of 1.7% too slow. They're on 7" rims instead of the stock 6.5" rims. Like you, I'm not concerned about the H vs. V speed rating difference and am very happy with the Kumho's: quiet, smooth ride, good wet/dry performance, and very inexpensive at $65.
