The 20K service is primarily an oil & filter change with a general inspection of other components. Eyes-on only while the vehicle is in the air, don't think the inspection even requires much hands-on time.
So, is an hour enough time to perform the 20K service? I say Yes.
Did the Dealer do everything he was required to? Based on my experiences I say No. But you probably got fresh oil and a new filter, those are the most important.
Look out for the 30K service though. Lots of us have discovered later that items were "missed", particularly if the 30K service was included in the purchase price of the car (remember when the Salesman said it was Free!) and not billed to customer when performed. The HVAC cabin filter is the item usually discovered later to have been "missed". But I wonder how many other items we simply don't discover.
