I don't know if the V6 has any issues with an xW40 oil. It would be good to know what the current recommendations were from a 2003 owners manual.
You can use any of the Delvac 1 that you still have on hand. It is now starting to hit shelves as M1 Truck and SUV. M1 0W40 would also be a good choice. I used Delvac on in a 95SET, worked well.
I don't think that the above oils would suffer from being in the sump for a year.
I don't thing getting the engine warmed up is enough. You need to run it for a while at temperature to drive off moisture. You need some occasional 30 mile runs in there, perhaps longer in the winter.
You had a diesel, those take forever to get to temperature.
