I have two thoughts:
1. coolant temperature sensor
2. manifold vacuum sensor
1. The sensor might be getting confused at low coolant temps, thinking that the coolant is warmer than it actually is - so the ECU adjusts the fuel as if the car is warmer (meaning it gives it less, so you stall).
2. When you shift into gear, you change the vacuum (or "absolute pressure") in the engine. They used to call the sensor that measures this the MAP (Manifold Absolute Pressure) sensor - I'm not sure what Saab calls it. But again, it might not be reading properly when the car is cold.
Since you didn't mention it, I'm assuming you're not getting a "check engine" light. But that makes sense - the diagnostics aren't performed until the car warms up, and by that time the temp is probably in a range where the sensors perform normally.
