If you already have the pedal to the plastic, it will not matter if you are in normal or sport mode, you are destined to wear out your car early anyhow. Sport mode mostly advances the electronic throttle map, which means that a small amount of effort or displacement of your right foot results in a larger throttle opening than would other wise occur in normal mode. If you tend to just roll the throttle open gradually you are probably not doing much more than you would if you were in the normal mode. I use sport exclusively in my 2002 Aero and get 31.5 highway and about 28 overall. I wish the car had just been designed to operate in what we call sport mode,as I think there is just no need for the so named "normal" mode, but that was obviously a marketing decision.
