M1 oil question

Unsure which M1 to go with…obvious choices are 0w40, 5w40, 15w50. It seems the 0w40 might be too thin, while the 15W50 may be too thick. Saab Spokane’s argument for the 15w50 is convincing, although I don’t like their 15w50 /10w30 mixture recommendation for the winter months. Is it bad to switch oil viscosity at each oil change? I noticed some interesting data on the bottles. 0w40 pours to -65F, 15W50 to -49F (not much difference in real usage). Hope not many of us see anything close to these temperatures. 0w40 states for gas, diesel, and turbocharged engines. 15w50 is recommended for supercharged and turbocharged and claims reduced sludge buildup. 5w40 claims good protection for heavily loaded diesel engines. I was surprised that 0w40 is OEM spec for Porsche and MB AMG (many of which are supercharged).
I never thought about oil this much before…I am putting in 15w50 for next 5k in hope that the engine gets better bearing protection and idles smoother. After that I will consider 5w40, 0w40 depending on feedback from others trials.
What is meant by energy conserving oil? Are there any tests to show this claim or is it simply marketing.
