You're probably burning it. If an engine doesn't come out of the factory quite right, you end up burning more and more oil. VWs have become particularly famous for this lately, although I assume it can happen to any make once in awhile. You won't necesarily see smoke depending on where and why it's leaking inside.
Oil light, as mentioned, is for pressure only. You can have fine pressure on 2.5 quarts (9-5 actually holds 5 quarts but one stays in the cooler during a change)...I think the last Saab to have an oil level sensor was the 9K.
The 'check in 1000 miles' is standard operating procedure, they want a consumption rate to give to SaabUSA so they'll authorize a tear-down. I'd get the 1000 miles thing in writing from the dealer service manager (so nobody can say you ignored the oil level), and let him know you're coming back in the second the oil level disappears off the bottom of the dipstick. It may not have sunk in to him that it's disappearing that fast.
VW's cutoff for excessive consumption (i.e. rebuild) is something like a quart in 800 miles, and I'd assume Saab's is higher since unlike VWs, they don't typically burn large amounts of oil. My sister's 99 Jetta got a rebuild when the consumption hit a quart every 500-600 miles, and there was no smoke at all.
