I've had several customers who after living with the aluminum look awhile, decided to stay with it. Installing the aluminum look in your 2000 will make it goofy, non stock, and more difficult to sell, although I see your point about the color match situation, silver and charcoal with aluminum and wood with merlot.
You can purchase a new wood dash and console for $295 from Saab. Not too difficult of a job to install, but I'm always unsure where the clips and fasteners are and am afraid I'd break something.
