You can use the low fuel light as a back-up gas guage. Fill it, reset the trip odometer and use the approx mpg X fuel capacity minus what you feel is a comfort and you should not deplete the fuel in your tank.
Old VWs didn't have a gas guage. You'll be fine until you get it fixed.
