My guess is that a 7.5" rim will fit - you'll just loose a little more of the space between the well and the hard floor.
Definately put the wheel in upside down. That way you can anchor it down with the supplied screw down knob. Failure to do this could lead to your decapitation in the event of a collision.
You have to be very careful when you put the wheel in or take it out. Otherwise the threaded hold down rod will put a nasty gouge across the face of the wheel. Been there, done that.
The amount of room lost equals the difference in width of the tire.
That's up to you. You could do a double wheel exchange if the opposite side goes flat and you're anal.
