NTC is Negative Temperature Coefficient, which means that it's a resistor whose resistance value goes down with increasing temperature. What you care about is that it is a coolant temperature sensor, to determine how warm the engine is. If it's the one tied to the fuel injection, it's there to determine if it's a cold engine (run slightly richer) or a warm engine (lean the mixture out a bit).
